  1. Cut the bacon into diced pieces.
  2. In a skillet fry the bacon over a medium heat until its crispy.
  3. Cut the bok choy into medium pieces.
  4. Put the bacon on a paper towel and set aside.
  5. Add the olive oil to the skillet and reduce heat.
  6. Sauté the onion, garlic and if using red pepper flakes until the onion has softened.
  7. Add the bok choy.
  8. Cover and cook over low to medium heat for about 5 minutes.
  9. Remove lid, stir and let it cook for a few minutes.
  10. Add the bacon back to the pan and stir.
  11. Check seasoning is okay.
  12. Serve immediately.
