Put the courgette in a clean tea towel and squeeze tightly to remove any liquid. Tip into a large bowl and add the carrot, halloumi, onion, breadcrumbs, cumin, coriander, salt, eggs and flour.   7. Fry the burgers for approximately 5 minutes on each side, until they are nicely browned.
  8. Layer the burgers in the baps with mixed leaves and tomato slices.
