So much yum in every bite! I was really inspired to make these Autumn Veggie Burgers because my fiancé and I are always looking for delicious foods to eat for football games. Steps to make Autumn Burgers:

  1. Wash and dry sweet potato. Cut off ends. Using a mandoline slicer, cut 1/8 " thick slices lengthwise.
  2. Preheat oven to 425°F.
  3. On a parchment or silicone lined baking tray, spread out sweet potato slices. You will most likely need two trays. Spray potatoes with oil. I use a misto sprayer. You can brush them lightly with oil. Sprinkle sea salt on top and bake for 15 minutes or until lightly golden.
  4. In a large bowl combine ground turkey, spices, onion, craisins and parsley. Mix well and form into 4, 4 ounce patties.
  5. In a hot skillet with heat set to medium, place patties. You may also grill. Cook patties 4-5 minutes a side.
  6. Serve burgers on the buns with sweet potato chips on top and as a side.

Make a deep impression in the center of each burger, using your thumb. Brush the burgers on both sides with oil and sprinkle with salt and pepper.
