The ingredients needed to make Bottle Gourd Rice:

  1. Get 1/2 Bottle Gourd chopped
  2. Prepare 1 1/2 cup sona masoori rice
  3. Prepare 2 3/4 cup water
  4. Make ready 2 tbsp oil
  5. Make ready 1 tbsp ghee
  6. Prepare Whole spices (Cinnamon, cloves, stone flower, 1 tsp fennel seeds)
  7. Take 1 1/2 onion thinly sliced
  8. Take 1 red chilly
  9. Make ready 1 tbsp Ginger garlic paste
  10. Make ready 5-6 stem coriander leaves
  11. Get 3-4 stem mint leaves
  12. Get 1 1/2 medium size tomato chopped
  13. Get 3/4 tsp red chilly powder
  14. Take Salt as required
  15. Get drops Few lemon

Take Bottle Gourd and dice into cubes as shown below in picture. Heat the oil into pressure cooker, add cumin seeds and green chillies. Sorakkai kootu / Bottle gourd kootu for rice is an easy to make, yummy South Indian style kootu recipe with coconut, moong dal. We call it as sorakkai poricha kuzhambu too.

Steps to make Bottle Gourd Rice:

  1. Heat a pressure cooker with oil and ghee and temper with whole spices.
  2. Add onion and red chilly. sauté until it becomes very soft.
  3. Add ginger garlic paste and sauté until raw smell goes.
  4. Add coriander leaves and mint leaves. Sauté for few mins. Add tomato and sauté until it becomes soft. Add red chilly powder and salt.
  5. Add bottle gourd and sauté for few mins. Add water and mix it well. Add rice and finally add few lemon drops. Close the lid and pressure cook for 2 whistles.
  6. Serve with any raita.

Bottle gourd, Lagenaria siceraria, is a genus of tropical and subtropical vines in the Cucurbitaceae family. It is also called Calabash Gourd, Trumpet Gourd and Long Squash.
